Ah, yes, grande aioli is French. Sorry. I just made a lovely chicken dish: brown chicken pieces, then cover in a few sliced onions, mushrooms, tomatoes or tomato sauce and a full cup of red wine vinegar; add a bit of honey to cut the acid. Simmer until the chicken is done. Reduce the sauce before serving. Delicious!

Here in the US, there's Italian (all the tomato based stuff) then there's Italian grill (marsalla, grilled stuff), that's what I like. I'm not big on heavy tomato based dishes, but oh I love chicken marsalla, alfredo etc.

Have you checked out our site yet? realcookn.tv ? We'd LOVE to have you contribute some genuine Italian family recipes. That would be just wonderful.
