Sweet Potato Casserole
3 cups mashed Sweet potatoes
1/2 cup Butter
3 Eggs, slightly beaten
1 cup Sugar
1/2 tsp. Salt
1 tbs. Vanilla
Mix all ingredients well. Pour into casserole dish.
Topping:
1 cup Brown Sugar
1/2 cup self-rising flour
1 cup Coconut
1 cup chopped Nuts
1/2 cup Butter
Mix topping till crumbly. Sprinkle topping potato mixture. Bake at 350 degrees for 30 to 45 minutes. Freezes well before or after cooking.
** You can use Yams or Butternut Squash instead of sweet potatoe…
