About Me:
I turn 50 this year in September. I'm a mother of two sons and have 3 grand-daughters. I started cooking as a young girl with my mom and grandmother. One
of the first things I remember making
were biscuits with my grandmother. Every
year my family would tell me to enter my
baked goods in the New Mexico State
Fair. In 1990 I finally decided to enter the
cookie contest and was very surprised
that I win three blue ribbons. After that I
entered the New Mexico State Fair every year until I got sick with Lupus. I still cook at home and teach my grand-daughters to cook. I believe what you
make with all your heart n soul is made with LOVE and should be shared with the ones you LOVE.

" BUTTER PECAN ICE BOX COOKIES "

2 - 1/4 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon cream of tartar
1 cup butter, preferably salted, softened
1 cup packed brown sugar
1 egg
1 teaspoon vanilla
1 cup coarsely chopped pecans

In a medium bowl, stir together flour, salt and cream of tartar. In a large bowl, beat together butter and brown sugar until light and fluffy. Beat in egg and vanilla. Blend in flour mixture and pecans.

1 (8 oz.) can crushed pineapple, well drained
1/4 cup apricot jam
1 - 1/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup sugar
1 egg
1 teaspoon vanilla
1/2 cup milk

Streusel Topping

1/2 cup chopped nuts
1/4 cup packed brown sugar
2 Tablespoons butter, softened
1/2 teaspoon cinnamon

Preheat oven to 350 F. Grease and lightly flour an 8 inch-square baking pan.

HONEY 'N' OATS BREAD

1/2 cup old-fashion rolled oats
1 - 1/2 cups whole wheat
1 - 1/2 cups bread flour
1 egg
1 - 1/2 teaspoon salt
1 - 1/2 tablespoons honey
1/4 teaspoon baking soda
1 cup buttermilk (or 4 tablespoons dry buttermilk powder and 1 cup water)
2 teaspoons active dry yeast (or one package)

Place all ingredients in bread machine pan, select Light Crust setting and press Start.

After the baking cycle ends, remove bread from pan, place on a cool rack and allow to cool 1 hour before slicing.

MOM'S BEST APPLE PIE

rust: 10 inch double pie crust
Prepare pie crust and put in the refrigerator until needed. Pie Crust should stay cold until you put it in the oven.

Preheat oven to 375 F

In a large bowl place

8 cups peeled and sliced Granny Smith Apples ( about 8 medium apples )

In a medium bowl combine

1/2 cup firmly packed brown sugar
1/2 cup sugar
2 tablespoons flour
1/4 teaspoon nutmeg
1 teaspoon cinnamon
